Eva Jensen, age 80, of Bristol, Wisconsin, passed away Thursday, October 11, 2018 at Burr Oak Manor in Genoa City, Wisconsin.
Eva was born April 26, 1938 in Aarhus, Denmark to Chresten and Ester (Greve) Christensen. Upon graduation, Eva attended cooking school where she received training by one of the premier chefs in Denmark. This is where her passion for cooking and entertaining all began, always finding a reason to gather together family and friends. On September 15, 1956, Eva married Chris Jensen in Denmark. In pursuit of the American Dream, they immigrated to the United States where they worked hard and built a strong family which filled Eva's heart with great love for all her family. Their Danish heritage was maintained with frequent family trips to visit relatives in Denmark. Over the years, Eva and Chris and their children enjoyed traveling, sailing, boating, camping, and snowmobiling. Their keen sense of adventure was instilled early on into their children and grandchildren’s lives. For over 25 years they worked together, side by side, co-managing a mobile home park before retiring in 1992. Upon retirement, they became “snowbirds,” spending their winters in Punta Gorda, Florida and their summers home in Illinois with family. To Eva’s delight, warm, sunny days in Florida were spent making fond memories and developing lasting friendships. In fact, for over 5 years, they lived aboard a 38’ Trawler in Fisherman’s Village Marina with a group of boaters known as the “B-dockers.” In 1995 they embarked on a 29,400 mile adventure known as the “America’s Great Loop Tour.” Eva carefully documented the five-month long trip in a detailed daily log. This exciting cruise was one of many adventures Eva and Chris shared throughout their 62 years of marriage.
She is survived by her husband Chris; two children, Brian (Phyllis) Jensen, Marianne (Glenn) Solum; five grandchildren, Kristen (Matt) Meyers, Ashley (Louis) Gerchikov, Ryan (Bianca Orlandi) Solum, Justin Solum, Kristopher (Christine) Solum; five great grandchildren, Julie, Emily, Leah, Jack and Luke; two sisters in Denmark, Edith (Hans Peter), Tove Hansen; many nieces and nephews; and Cavalier King Charles, “Panto.”
Eva was preceded in death by her parents; and three sisters, Ruth Rasmussen, Grethe Madsen, and Ebba Hansen.
A Celebration of Life gathering will be held on Thursday, November 1, 2018 from 2pm until the 4pm service at Thompson Spring Grove Funeral Home.
